Amp up your smoothies and smoothie bowls with purple sweet potato! Not only do they add extra fiber, potassium and vitamins A & C (among many other nutrients) but you can’t beat the beautiful color.
The purple sweet potato is said to have 150% more antioxidants than blueberries. Antioxidants help to guard against cardiovascular disease and cancer.
Purple sweet potatoes also contain a powerful antioxidant linked to reducing inflammation.
Ingredients:
1 cup cooked sweet potato
1 banana
1 cup frozen strawberries
1 cup frozen blueberries
3 dates, pits removed
Juice from 1 lemon
1 cup coconut milk
1 cup orange juice
1/2 tsp cinnamon
1/4 tsp nutmeg
Directions:
Place all ingredients in a high speed blender and blend until smooth. You can add additional liquid if needed to thin out for a drinkable smoothie. This will yield approx 4-6 cups of smoothie.
If you wish to thicken it up for a smoothie bowl, add 1/2 cup more sweet potato and 1/2 cup additional frozen berries.
