Peanut Butter and Chocolate Almond Flour Cookies

These are cookies you can feel good about giving to your kids!
✔️High protein from the nut butters and almond flour
✔️ Sugar-free (if you choose 100% cocoa chocolate chips)
✔️Gluten-free
✔️Grain-free
✔️ Lactose-free
✔️ Healthy fat from coconut oil
These literally took less than 15 minutes to whip up and my kids had a healthy cookie treat to snack on all last week. Just melt the oil on the stove, throw everything in one bowl and mix together and bake.
Nothing fancy about these cookies, about as easy as it gets. They won’t last long on your counter!!
Ingredients
3/4 cup creamy peanut butter
1/3 cup melted coconut oil
1/3 cup honey
1 egg
1 teaspoon vanilla extract
1 1/2 cup almond flour
2 tbsp coconut flour
1/2 tsp baking soda
1/2 tsp salt
Handful of chocolate chips (unsweetened cocoa is best)
Directions:
Preheat oven to 350F° and line a baking tray with parchment paper.
Melt coconut oil on low heat on the stovetop.
Mix all ingredients in a bowl until well mixed.
Take a spoonful of dough and roll into a ball. Place on the tray and flatten slightly with the palm of your hand.
Use a fork to make a pattern on top of the cookie. (Not critical, but it’s prettier!)
Bake for 10-12 minutes until golden brown. Enjoy!
Note about peanut butters: READ THE LABEL! Many nut butters have added sugar which is completely unnecessary. Find one that lists only dry roasted peanuts and maybe salt. Nothing else! If you can find fresh ground nut butters in the store, even better!!
