Pistachio Chocolate Chip Cookies

These cookies are chocolatey and gooey but they pack a bit of crunch (and extra nutrition) with some coarse chopped pistachios. 


✔️Gluten-free

✔️Grain-free

✔️Dairy-free

✔️Refined sugar-free


And they are delicious! 


1/4 cup melted coconut oil

1 egg

1 teaspoon vanilla extract

1/2 cup honey

2 cups almond flour

1 teaspoon baking soda

1/2 teaspoon salt

1/2 cup pistachios, rough chopped

1/2 cup chocolate chips (I like Hu Chocolate dairy-free, refined sugar-free chocolate)


  1. Preheat oven to 350 F. Place a piece of parchment paper on a baking tray. 

  2. Combined all wet ingredients in a large bowl. 

  3. Add in almond flour, baking soda and salt and stir until a thorough mixed batter forms.

  4. Stir in pistachios and chocolate. 

  5. Scoop 2 tablespoons of dough and use your hands to form a ball. Place on baking tray, flattening dough ball slightly. 

  6. Bake for 14-15 minutes until golden brown. Let cool for 10 minutes and enjoy! 


These can be frozen so make a double batch for when the Chocolate Chip craving hits!
