
It really doesn’t get any easier than whipping up a chia seed pudding bowl for breakfast. No cooking or baking required, only six simple ingredients and it can be put together in less than five minutes of active time. Make it ahead of time the night before and you have a quick nutritious breakfast to grab on the go.
This pumpkin and banana chia pudding yogurt parfait is packed full of protein, fiber, omega-3s and healthy fats to keep you full all morning long. The pumpkin adds some extra immune-boosting vitamins and is very easily digestible and gut friendly.
Ingredients for pumpkin chia seed pudding:
1 cup full fat coconut milk
1/4 cup chia seeds
1/2 cup pumpkin purée
2 tbsp honey or maple syrup
1 tsp pumpkin pie spice
Optional ingredients for parfait:
1 cup unsweetened Greek yogurt
1/2 banana
Directions:
Mix all the ingredients for the pumpkin chia seed pudding together in a container. Let sit in the fridge for at least 2 hours (or overnight) to allow chia seeds to set. Stir at least twice in the first hour to prevent chia seeds from clumping.
Makes 2 servings.
To make a yogurt parfait, alternate layers of pumpkin chia pudding and yogurt. Top with bananas and a sprinkle of pumpkin pie spice. Enjoy!
