This peppermint fudge uses only a handful of healthy ingredients and is flavored with peppermint extract to taste like a candy cane without the sugar and artificial red dye.
It is an easy dessert recipe that is sure to please your guests (including kids!) at any holiday gathering. It is paleo, whole 30 and SCD compliant and free of gluten, grain, eggs and dairy. It can easily be made vegan by swapping maple syrup for the honey.
Ingredients
10 dates
8 oz raw cocoa butter
1/2 cup honey
1/3 cup cashew butter
1 tbsp vanilla extract
1/2 tsp salt
10 drops of certified therapeutic food grade peppermint essential oil or peppermint extract
Directions:
First, make date paste by soaking dates in boiling water for 10 min. Drain and add to food processor with 2 tbsp of water. Process until smooth, adding additional water 1 tsp at a time as needed.
Melt cocoa butter in a saucepan on low heat until fully melted.
Add honey, cashew butter, vanilla, salt and 4 tbsp of date paste. Whisk slowly until fully incorporated.
Add peppermint and stir.
Line an 8x8 pan with parchment paper. Pour mixture into pan and freeze for at least 1 hour.
This fudge should be kept in an airtight container in the freezer. It will still retain its chewy texture from the cashew butter and date paste so it only needs to thaw for a few minutes before being enjoyed!
