If you’re looking for the perfect refreshing Mocktail (which could easily be turned into a cocktail) for this holiday weekend, I’ve got you covered!
This mojito has a twist with some honey-sweetened (not sugar!) ginger simple syrup. With an abundance of mint flavor and a citrus punch from the lime, this is sure to keep you cool and hydrated!
Make the simple syrup at least a few hours prior to serving as it needs to be cooled in the fridge. It will last in the fridge for up to a week.
Ingredients for simple syrup:
2 cups of water
4 inch knob of fresh ginger
3 tbsp honey
*this amount will yield about 4 drinks worth, but it depends on your taste preferences and how much ginger syrup you use.
Ingredients for the drink:
4 mint leaves
Juice from 1 lime
2 tbsp ginger simple syrup
Plain or lime flavored sparkling water
Ice cubes
Directions:
To make the simple syrup, add water, ginger and honey to a sauce pan and bring to a boil. After boiling for 3 minutes, turn heat to low and let simmer for 20-25 minutes until the water has reduced a bit and thickened.
Strain the ginger from the syrup and place in a glass container in the fridge until ready to use.
In a tall glass, muddle mint leaves to bring out the flavor
Add several ice cubes and 2-3 tbsp of the ginger syrup (depending on how strong you want the ginger flavor to come through).
Fill the rest of the glass with plain or lime flavored sparkling water. (I love spindrift because they use real lime to flavor their drinks)
Top off with some mint leaves and enjoy!
If you prefer to make this a cocktail, I would recommend some tequila to turn this into a true mojito!
