Honeydew Melon Sorbet

This is one of the easiest and most refreshing summer desserts. It is sort of a mix between a sorbet and an Italian ice.

The honeydew melon, lime, mint, honey and salt all mix together for a wonderful blend of flavor.

Honeydew melon and salt are both great forms of natural electrolytes for those hot sweaty summer days!

Ingredients:

1 honey dew melon

1/3 cup fresh lime juice

3/4 cup water

12 mint leaves

1 tbsp honey

1/2 tsp sea salt

Directions:

  1. Cut melon into small cubes and place on a baking tray lined with parchment paper. Place in freezer for 4-6 hours.

  2. Place frozen melon and all other ingredients in a food processor and blend together thoroughly. Scrape down the sides of the food processor as necessary.

  3. You can serve immediately or store in a silicone ice cream container to enjoy later! I would recommend not using a regular plastic Tupperware container for freezer storage. I find it can be difficult to scoop and the plastic Tupperware tend to crack with frozen desserts.
