Homemade Almond Joy Bites


Sometimes you feel like a nut, sometimes you don’t!


Almond joy was always my favorite candy bar growing up and I wanted to recreate that coconut chocolatey chewy goodness. These can easily become a Mounds Bar by omitting the almond.


These have all the flavors of the original candy bars with much healthier ingredients. They are free of gluten, grain, dairy, refined sugar, corn syrup and don’t contain anything artificial.


And the best part of all, they are very easy and take less than 20 minutes to make!


Ingredients

1 cup finely shredded unsweetened coconut

1 tbsp coconut flour

3 tbsp coconut oil, softened

2 tbsp honey or maple syrup

12 whole almonds

1 cup chocolate chips (I like to use Hu Kitchen chocolate to keep these sugar free)


Directions

  1. Combine shredded coconut, coconut flour, coconut oil and honey in a bowl and mix thoroughly.

  2. Roll small balls of the dough and place on a plate lined with parchment paper.

  3. Place one whole almond on top of each while gently pressing down into the dough.

  4. Melt the chocolate in the microwave or on the stovetop on low heat.

  5. Gently swirl the dough ball in the chocolate, place back on the plate. Put plate in fridge for an hour to set the chocolate and enjoy!!


This recipe makes about 10 pieces.
