Hazelnut Brownies

Nothing beats fresh warm brownies topped with melting ice cream. These are made with ground up hazelnuts and sweetened only with dates. The hazelnuts make them taste like they are made with Nutella, but they contain no refined sugar and are gluten, grain and lactose-free.


Pair with your favorite ice cream and you’ve got the perfect dessert treat! My favorite choice of store-bought ice cream is Fronen, a vanilla dairy free ice cream. Made with only 4 simple ingredients and sweetened with honey, it is the best and healthiest ice cream option next to homemade.


Ingredients:

1 cup hazelnuts, ground up

18 pitted dates

4 oz of raw cocoa butter, melted

1 egg

1 tsp vanilla

1/2 tsp baking soda

1/4 tsp salt


Directions:

  1. Preheat your oven to 350ºF and line an 8 x 8 baking pan with parchment paper

  2. Melt the cocoa butter in a saucepan on the lowest heat setting. Let it cool considerably before adding it to the batter.

  3. In a food processor, grind the hazelnuts until it becomes a fine powder. Continue processing while you add in the dates a few at a time. Once hazelnuts and dates are fully incorporated, slowly add in the melted coconut butter, egg, vanilla, baking soda and salt. Mix until it is a smooth batter.

  4. Pour into pan and bake for 25 -28 minutes until the top becomes darker brown.


Optional Caramel Sauce:


1 cup full fat coconut milk

1/2 cup honey

1 tbsp vanilla

1 tsp salt


Place all ingredients in a saucepan on medium-low heat and let simmer for 25-30 min until honey caramelizes and mixture thickens. Stir occasionally to prevent burning.


These are great right out of the oven, but they take on a more brownie consistency when they are cooled in the fridge. They freeze well and can be cut up small and swirled in vanilla ice cream to make a great ‘brownie bites’ ice cream treat.
