My kids LOVE Rice Krispie treats (I mean, who doesn’t?) and I’ve been trying to figure out how to make them grain free. I use shredded coconut in many baking recipes so I figured I would try larger coconut flakes and add them to my homemade marshmallows and see what happened.
The result? A tasty and healthy grain-free “Rice” Krispie treat!
Ingredients:
4 cups of large piece shredded coconut
1 cup honey
1 cup water
3 Tbsp gelatin
1Tbsp vanilla
1/2 tsp salt.
Directions:
Prepare a 9x5 baking pan by lining with parchment paper and set aside.
Toast coconut in a pan on the stove on low / medium heat, stirring frequently so it does not burn.
3. While coconut is toasting, place 1/2 cup of water and gelatin in the bowl of a stand mixer. Mix together by hand to fully incorporate and let sit for several minutes.
4. Heat the other 1/2 cup water and honey in a medium saucepan until it reaches about 240ºF. It should be bubbling so be careful it does not overflow. Remove from heat once temperature is reached.
5. Whisk in vanilla and salt into the honey mixture.
6. Using your stand mixer, mix the water and gelatin at medium speed. Slowly pour in the honey mixture and let it mix on medium / high speed for 10-12 minutes until white marshmallow peaks form. Alternatively, you can use a handheld mixer if you don't own a stand mixer.
7. Slowly pour in toasted coconut until fully incorporated
8. Pour marshmallow mixture into prepared baking dish. Use a spatula to spread around evenly. Place in fridge for 3 hours to set, then cut and enjoy!
