Dairy-Free Avocado Ice Cream


This easy 6 ingredient avocado ice cream is the perfect healthy summer treat! 


If you’ve never made homemade ice cream before, don’t worry! An  ice cream maker isn’t even needed. With a good blender, a few simple ingredients and a freezer, you can make any flavor ice cream in no time. 


Avocados have a naturally smooth and creamy texture that makes them perfect for a dairy-free yet ultra-rich “nice” cream. Add some natural sweetener with a banana and honey or maple syrup and you have a  tasty treat you can feel good about eating! 



This recipe is dairy-free, egg-free, gluten-free and sugar-free. 

 

Ingredients: 

3 ripe avocado 

1 ripe banana

I can full fat coconut cream

1/3 cup honey or maple syrup

1/4 cup lime juice 

8 mint leaves 


Directions:

Blend all ingredients in a blender, pour into a silicone ice cream pan and freeze for at least 4-6 hours. If frozen for longer than that, you may want to let it thaw for 10-15 minutes before scooping. 


You can play around with different variations of this ice cream:


  • add 2 tbsp of cocoa powder to make a chocolate avocado ice cream

  • Add more mint leaves or some peppermint extract to make a mintier ice cream

  • If you love nuts, some chopped up pistachios would taste great folded in to the ice cream


You can even put these into popsicle molds for a fun treat for the kids!
