This side dish has such simple ingredients but it packs a punch! The green cabbage, kale and spinach are powerhouse veggies and are loaded with nutrients. They are among some of the healthiest foods you can consume.
Ingredients:
1 head of green cabbage, chopped
1 bunch kale, chopped
3 cups spinach
1 large leek, chopped
4 cloves garlic, chopped
1 Serrano pepper, de-seeded and chopped
1 jalapeño, de-seeded and chopped
2 tsp vinegar
2 tsp honey
1tsp salt
3 tbsp butter
2 tbsp olive oil
chili pepper flakes for garnish
pine nuts for garnish for garnish
Directions:
Heat a large Dutch Oven or ceramic pot on the stovetop on medium and melt butter.
Add leeks and cook for 2 minutes. Add garlic and peppers and cook for 1 minute, stirring frequently so the garlic does not burn.
Add cabbage, kale, spinach and olive oil. Let sauté for 15-20 minutes, stirring occasionally, until all the greens are wilted.
Add honey, vinegar and salt. Stir together.
Garnish with chili flakes and pine nuts and enjoy!
