This roasted broccolini comes out of the oven with tender stalks, crispy tips and a salty finish. It’s a great side dish for any main course. Ready in less than 20 minutes with very minimal prep work, this simple yet beautifully arranged platter deserves a spot on your dining table.
3 bunches broccolini
8 cloves garlic
3 tablespoons extra virgin olive oil
1 ½ teaspoons coarse sea salt
1 teaspoon lemon zest
1/2 teaspoon chili flakes
2 tablespoons grated Parmigiano Reggiano
Preheat the oven to 400°F. Trim off the last inch of the broccolini stems. Remove the garlic cloves from the paper wrapping. Place broccolini and garlic on a baking tray and drizzle with 2 tablespoons of olive oil and 1 teaspoon of salt. Roast in the oven for 15 minutes until the broccolini is beginning to crisp up and the garlic is browned but not burnt.
Arrange on a platter and drizzle with the remaining olive oil. Sprinkle with lemon zest, chili flakes, remaining salt, and grated Parmigiano Reggiano cheese. Serve immediately.
