Garlic Butter Sweet Potato Rounds

Serves 4

The vibrantly colored sweet potatoes with tender, crispy edges and melted salty cheese with fresh herbs make this savory side dish stand out on your table.
3 large sweet potatoes
3 tablespoons extra virgin olive oil
1⁄2 tsp coarse sea salt
2 tablespoons butter
2 cloves garlic
4 oz feta
2 tablespoons fresh thyme
1 tablespoon fresh parsley
Preheat oven to 400F°. Slice the sweet potatoes into rounds, about 1⁄2 inch thick. Lay flat on a baking tray and drizzle with olive oil, ensuring they are well coated. Sprinkle with salt and roast in the oven for 25-30 minutes until they are fork tender.
Melt butter in a saucepan on low heat on the stove. Add diced garlic and thyme and lightly sauté in the butter until the garlic becomes fragrant, swirling frequently.
Remove potatoes from the oven and turn it to a broil setting at 400F°. Spoon the butter garlic sauce onto the potatoes. Sprinkle with crumbled feta and place back in the oven for a few minutes until cheese is melty and the edges of the potato rounds are slightly crispy. Garnish with fresh chopped parsley and some additional fresh thyme, and serve immediately.
