Summer Berry Salad with Microgreens

This is the perfect light and simple summer salad that can be served as an appetizer, a side dish or a meal in itself. The dressing has both lime juice and honey with makes for a slightly sweet and vibrant citrus taste that pairs nicely with the berries.


The berries, along with the addition of some microgreens, make this a powerhouse of an antioxidant salad. I was able to find broccoli micro greens at a local store. The broccoli greens in particular have more potent micronutrients than mature broccoli which makes it a tremendously healthy addition to any salad.



Ingredients for Salad:

Arugula

Micro greens (can also use watercress)

Cucumber

Avocado

Berries

Goat cheese

Toasted almond slices


Ingredients for dressing:

1/3 cup olive oil

2 tbsp fresh squeezed lime juice

1 tbsp honey

1 tsp vinegar

1/2 tsp salt

6 mint leaves, chopped

Pepper to taste


Directions:

  1. Assemble the salad ingredients onto a platter. You can lightly toast the almond slices by sautéing them in a dry pan (no oil) on low heat for 5-6 minutes. Watch carefully so they don’t burn.

  2. Whisk all ingredients for dressing in a bowl, pour on top of salad and enjoy!
