Quick dinner inspiration coming your way! 15 minutes of active prep is all it takes and you have a wonderful plate of juicy chicken and roasted vegetables on your table.
This sheet pan dinner is Whole 30 compliant, Paleo, Keto and SCD friendly and free of gluten, grains and dairy.
Ingredients:
1 pound of green beans
1 head of broccoli, cut into florets
1 pint of cherry tomatoes
4 slices of sugar-free bacon, raw
6 cloves of garlic, peeled and halved
3 tbsp olive oil
Salt and pepper to taste
6 bone-in chicken thighs
Directions:
Preheat your oven to 400ºF.
Arrange all the vegetables on a baking tray. Drizzle with olive oil and sprinkle with 1 tsp salt.
Cut raw bacon into bite-sized pieces and spread around the edges of the baking tray.
In a separate bowl, toss chicken with olive oil, salt and pepper. Arrange chicken on the tray.
Bake for 45 minutes or until chicken reaches internal temp of 165ºF. Enjoy!
