Sage-Infused Sweet Potato and Apple Hash

This breakfast hash is a great meal prep dish that can be prepared ahead and enjoyed for breakfast, lunch, or dinner throughout the week. A crispy sage-infused olive oil is drizzled on top to elevate the flavor of these simple ingredients.
1 pound ground turkey
½ teaspoon garlic powder
1 ½ teaspoon salt
5 tablespoons extra virgin olive oil
3 cups sweet potatoes, peeled and cubed
1 large onion, chopped
2 cups apples, peeled and cubed
3 cups spinach
1 teaspoon dried parsley
2 tablespoons fresh sage, roughly chopped
In a large bowl, combine the ground turkey, garlic powder, and ½ teaspoon of salt. Heat 1 tablespoon of olive oil in a cast-iron skillet on medium heat. Brown the turkey until no pink remains. Drain the meat by using a slotted spoon and set aside. Drain any excess liquid from the skillet before adding the vegetables.
Return the skillet to the heat and add 2 tablespoons of olive oil. Add the sweet potato cubes and onion, and saute for 10 minutes until softened. Add the cooked turkey, apple cubes, spinach, dried parsley, and remaining salt and continue to saute until the spinach is wilted.
While waiting for the spinach to wilt, add the remaining 2 tablespoons of olive oil to a small saucepan and heat on medium heat. Add the fresh sage and let it simmer until the sage becomes crispy. Swirl the pan frequently to infuse the sage flavor within the olive oil. Drizzle the oil and sage on top of the dish and stir it in before serving.
