Roasted Cauliflower with Chimichurri Sauce

This is a vibrant and flavorful side dish that can be served on the side of any main dish. It comes together very quickly and can easily be doubled to feed a crowd.

Ingredients:

2 heads of cauliflower

Handful of parsley

Handful of basil

2 cloves of garlic

3 Tbsp olive oil

1 Tbsp Vinegar

1 Tsp salt

Pinch of chili flake


Directions:

  1. Preheat your oven to 400ºF degrees

  2. Place chopped cauliflower florets on a baking tray, drizzle with olive oil and salt. Roast in oven for 30-35 min until golden brown.

  3. While cauliflower is roasting, place all the rest of the ingredients in a food processor and blend to desired consistency. If you prefer a runnier chimichurri sauce, add more olive oil while blending.

  4. Arrange cauliflower on a serving dish and drizzle chimichurri sauce on top. Enjoy!
