Such a simple salad with quite a flavorful punch!
The roasted cauliflower has a rich caramel taste while the pomegranates add a sweetness, lemon adds a brightness, tahini adds a nutty flavor and the goat cheese adds a bit of creaminess.
All these flavors meld together perfectly to create this ultimate side dish that can be served warm or cold.
Ingredients:
1 head of cauliflower
3 oz goat cheese
1/2 cup pomegranate arils
Parsley for garnish
Dressing:
1/3 cup tahini
Zest from 1 lemon
Juice from 1 lemon
1/4 cup olive oil
1 tbsp honey
1 tsp salt
Pepper to taste
Directions:
Preheat oven to 425F°.
Place cauliflower florets on a baking tray and drizzle with olive oil and 1/2 tsp salt. Roast until golden brown, around 25-30 minutes.
In a small bowl, whisk together all the ingredients for the dressing.
Arrange cauliflower on a plate. Top with crumbled goat cheese and pomegranate arils.
Drizzle dressing on top, garnish with chopped fresh parsley and enjoy!
