This flavorful red pepper feta dip was inspired by a traditional Greek recipe known as Htipiti. It is very easy to make and is great as a dip for cut up vegetables, on a salad, with crackers or as a topper for a chicken or meat dish.
Ingredients:
5 red bell peppers, roasted
4-5 cloves of garlic, roasted
I jalapeño, roasted and de-seeded
8 oz. Feta (about 1 cup)
5 sun dried tomatoes
3-4 TBSP olive oil
1 tbsp lemon juice
1/2 tsp salt
Pepper to taste
Directions:
Preheat oven to 425F.
Place cut peppers, garlic and one whole jalapeño on a baking tray. Sprinkle with olive oil and roast for 20 minutes in oven.
Once cool, de-stem and de-seed the jalapeño and transfer it to a food processor along with the pepper, garlic sun-dried tomatoes, salt, pepper and 2 tbsp of olive oil. Process until smooth.
Add feta and continue to process, adding olive oil slowly as needed to reach desired consistency. Enjoy!
