Parsley Walnut Pesto

Pesto is the perfect flavor enhancer for many meals. It is very simple to make and has only 6 main ingredients. Pesto is also a great way to add in some extra greens and healthy fats to your diet.


3/4 cup walnuts

2 cups parsley ( approx 2 handfuls)

3 garlic cloves

3/4 cups Parmagiano Reggiano

Juice from 1 lemon

3 tbsp olive oil

1 tsp salt

Pepper to taste


Place all ingredients in a food processor and blend together. You can add additional olive oil to thin it out if you desire a runnier texture.

Ideas for pesto use:

➡️ Dipping sauce for any veggie

➡️ Use as a salad dressing

➡️ On a tomato caprese salad

➡️ Drizzle over a platter of roasted veggies

➡️ Pair with any chicken, meat or shrimp dish

➡️ Add to scrambled eggs or on an omelette

➡️ Use on a homemade pizza in place of tomato sauce

➡️ Add a spoonful to a bowl of soup

➡️ Mixed in with pasta (second picture shows pesto with a plant based lentil pasta)
