Orange Strawberry Dark Chocolate Bark

Happy February! With Valentine’s Day around the corner, I’m whipping up some healthy chocolatey treats.
Did you know dark chocolate is a super antioxidant food with a good dose of magnesium?
Of course, the other ingredients added to most store-bought chocolate (like sugars, sugar alcohols and preservatives) can easily negate these benefits.
Why not try making a super easy chocolate bark with some delicious topping for a healthy treat for your Valentine (or yourself!)
There are so many different toppings you can use! I used crushed freeze dried strawberries, fresh orange zest and coarse sea salt which is a wonderful combo.
You could also use crushed nuts, finely shredded coconut, even some spices like cinnamon and ginger. Have fun and play around with different flavors!
Ingredients for the base:
8oz of 100% cocoa, unsweetened baking chocolate bar or chips
1/2 cup honey
1/3 cup coconut oil
1 tsp vanilla extract
Directions:
Prepare a baking tray with a piece of parchment paper.
Melt all ingredients in a small pot on low heat on the stove, stirring frequently to avoid burning.
Pour melted chocolate onto parchment paper and spread out with a spatula.
Top with a variety of topping of your choice.
Place in a refrigerator for one hour to set.
Break apart a chunk and enjoy. Store in the fridge in an airtight container for up to 1 week.
Side note:
Using 100% cocoa will result in a slightly more bitter end product which some may like. If you prefer less bitter, an alternative would be to use a healthier baking chocolate chip product. I love Hukitchen Gems or baking chips. Ingredients include only organic cocoa, coconut sugar and cocoa butter. Just omit the honey when melting on the stove.
