
When following the Specific Carbohydrate Diet, find out out that cocoa powder is not complaint is a hard pill to swallow. For a chocolate lover like me, I needed to find an alternative to satisfy my sweet tooth.
These sugar-free chocolates are sweetened with honey and made with cocoa butter. Cocoa butter is the pale-yellow edible fat that is extracted from the cocoa bean. It has the aroma and flavor of chocolate so it is a great alternative!
Ingredients
8 oz cocoa butter
3/4 cup honey
3/4 cup cashew butter
2 tsp vanilla extract
1tsp salt
10 drops of Certified therapeutic food grade peppermint essential oil or peppermint extract.
Directions
Melt the cocoa butter in a sauce pan on low heat.
Once fully melted, add the honey, vanilla, cashew butter, salt and peppermint. Whisk until fully incorporated.
Let mixture cool slightly then pour into silicone molds and freeze. Place silicone molds on a baking tray so it is easy to transfer them to freezer without spilling.
Once frozen, pop out of the molds and keep in a freezer safe container. Enjoy straight out of the freezer.
