Honey Roasted Carrots

The simple roasted carrot side dish is as delicious as it is beautiful. It’s a great dish to serve at any dinner gathering since it is minimal work to prepare and can be made in a large quantity.



Goat cheese

1 tsp honey

25 Pistachios, crushed

1 tbsp Olive oil

1/2 tsp Coarse salt

Microgreens for garnish


  1. Preheat oven to 425ºF

  2. Spread carrots on a baking tray, drizzle with olive oil and sprinkle some coarse sea salt on top. Roast in oven for approx 30 minutes.

  3. Place on platter and top with goat cheese, a drizzle of honey and crushed pistachios. You can also garnish with microgreens to make it extra nutritious and pretty!
