With only 3 main ingredients and made in 1 pot, this is such a quick, simple and nutritious side dish that can be made year round and pairs great with any main entree.
Ingredients
1 lb of green beans
5 big kale leaves, stem removed, finely chopped
1 leek, roughly chopped
3 tbsp olive oil
3/4 tsp garlic powder
1 tsp salt
Directions:
Heat olive oil in a large Dutch Oven or ceramic pot.
Sauté leeks for about 8 minutes until starting to caramelize. Stir frequently to prevent burning.
Add green beans, kale, garlic powder and salt. Using tongs, toss the green beans so the leeks and kale are evenly distributed.
Saute uncovered for about 10-12 minutes, stirring frequently, until green beans are at your preferred doneness. (I like mine to still have a bit of crunch!)
Use some additional olive oil if you notice the leeks sticking to the bottom of the pot. Enjoy!
