Grilled Zucchini Tomato Salad

This salad comes together quickly and is a great way to use up the tomatoes and zuchinni coming out of the garden. The zuchinni is grilled and can be added to the salad warm or cold. This creates a beautiful platter you can serve to a crowd at any gathering.



The dressing can be made with a plain unsweetened yogurt or a homemade 24-hour lactose-free yogurt. Some fresh herbs and crushed pistachios top it off nicely.





Ingredients:

1 pint cherry tomatoes

3 grilled zuchinni

1/2 cup yogurt

1 tbsp vinegar

1 tbsp honey

1/2 tsp salt

Pepper to taste

Fresh oregano and pistachios for garnish





Directions:

  1. Cut cherry tomatoes in half and place on a platter. Lay grilled zuchinni on top.

  2. Whisk the yogurt, honey, vinegar and salt in a bowl and pour on top of tomatoes and zuchinni. If the dressing is too thick, add a touch of olive oil until it is slightly runny.

  3. Garnish with chopped fresh oregano and crushed pistachios and enjoy!
