Grilled Eggplant with a Honey Vinaigrette

The fresh herbs, pistachios and hint of sweetness from the honey and raisins all complement each other to make this grilled eggplant dish the perfect side dish to any meal.


2 eggplant

2 tbsp olive oil

1/2 tsp salt

Dressing ingredients:

3 tbsp olive oil

1 tsp sherry vinegar

1 tbsp honey

1 tbsp lemon juice

1/4 tsp salt

1/4 tsp pepper


Handful of Raisins (sugar-free)

Chopped fresh parsley

Crushed pistachios


  1. Cut eggplant into 1/2 inch rounds and season with olive oil and salt. Grill for 8-10 minutes each side.

  2. Make the sauce by whisking all the ingredients in a bowl.

  3. Arrange the grilled eggplant in a platter and pour the sauce over top.

  4. Garnish with raisins, chopped pistachios and chopped fresh parsley. Enjoy!
