Green Bean Quinoa Salad with Lemon Vinaigrette

This green bean salad makes for the perfect side dish because it is quick, easy and delicious! One of the easiest salads to make for a crowd or to bring to a dinner party. It can easily be made ahead of time since the green beans retain their crunch.


Ingredients for salad:

1lb green beans, blanched

1 pint of cherry tomatoes

1 cup cooked quinoa

1/4 cup sliced almonds


Ingredients for dressing:

3 tbsp olive oil

1 tbsp Sherry vinegar

1 tbsp honey

Juice from 1 lemon

2 cloves garlic, minced

1 tsp salt


Directions:

  1. Blanch green beans in boiling water for no more than 5 minutes so they still retain their crunch and green color. Drain and place in a large bowl and allow to cool.

  2. Add cut cherry tomatoes, cooked quinoa and sliced almonds.

  3. Whisk all ingredients for the dressing in a bowl and add to the salad.

  4. Mix together and enjoy!
