This green bean salad makes for the perfect side dish because it is quick, easy and delicious! One of the easiest salads to make for a crowd or to bring to a dinner party. It can easily be made ahead of time since the green beans retain their crunch.
Ingredients for salad:
1lb green beans, blanched
1 pint of cherry tomatoes
1 cup cooked quinoa
1/4 cup sliced almonds
Ingredients for dressing:
3 tbsp olive oil
1 tbsp Sherry vinegar
1 tbsp honey
Juice from 1 lemon
2 cloves garlic, minced
1 tsp salt
Directions:
Blanch green beans in boiling water for no more than 5 minutes so they still retain their crunch and green color. Drain and place in a large bowl and allow to cool.
Add cut cherry tomatoes, cooked quinoa and sliced almonds.
Whisk all ingredients for the dressing in a bowl and add to the salad.
Mix together and enjoy!
