Greek Chickpea Salad

I originally called this recipe the Summer Salad because it has all the flavors of summer and will for sure be on repeat all summer long! This Mediterranean inspired salad is seriously as easy as it gets. It has super simple ingredients, takes less than 10 minutes to throw together and can feed a crowd if needed.

 It’s a great colorful salad that will look pretty on the table and will complement most main dishes. Or it can be the main dish itself! 


1 can of chickpeas, drained and rinsed

1 pint whole cherry tomatoes

1 large cucumber

1/2 red onion, finely diced

5 oz of crumbled feta 

1/2 cup chopped fresh parsley

1 tsp dried oregano 

2 tbsp olive oil

1 tbsp vinegar

1/2 tsp salt 


Place all ingredients in a large bowl and mix together. Enjoy! 

This recipe yeilds 6-8 servings
