Curry Quinoa Salad


This dish is simple and flavorful, filled with quinoa, fresh herbs, green onions, almonds and dried cranberries with an easy homemade dressing. It comes together quickly in under 30 minutes!


It is the perfect side dish or can be a main course itself and makes excellent leftovers for lunch. I added cubed feta when I used this the second night and it was a great addition that gave this salad a new life.


Ingredients for salad:

3 cups cooked quinoa

1 cup fresh cilantro, chopped

1 cup fresh parsley, chopped

2 green onions, thinly sliced

1 cup sliced almonds

1/2 cup unsweetened dried cranberries


Ingredients for dressing:

2 tbsp olive oil

1 tbsp Sherry vinegar

1 tbsp honey

Juice from 1 lime

1/2 tsp ground turmeric

1/2 tsp curry powder

1/2 tsp salt

1/2 tsp pepper


Directions:

  1. Cook quinoa according to the package instructions and allow it to come to room temperature.

  2. Meanwhile, chop your herbs and assemble all other salad ingredients in a big bowl.

  3. Prepare dressing by whisking all ingredients together in a separate bowl.

  4. Add cooled quinoa to the salad. Top with dressing and mix together. Enjoy!
