Cilantro White Bean Salad


This white bean salad is super simple yet is incredibly tasty as it is bursting with fresh herbs. It makes a great side dish for any meal and can be enjoyed warm or cold.


Beans are an excellent source of plant based protein and fiber. The high fiber content in beans helps healthy probiotics flourish in the gut.


Fun Fact: Did you know that beans are an everyday superfood staple in all BlueZones in the world? These are the populations that have the highest number of centenarians. On average, people living in these BlueZones eat at least 4 times as many beans as we do in the US. We should be aiming to consume a variety of beans several times a week.


To make beans more tolerable to your digestive system, I recommend starting with dried beans and soaking them in water overnight prior to cooking. This will help lessen any gas or bloating.


Ingredients:

4 cups of cooked white beans

1 cup chopped cilantro

2 tbsp olive oil

1 tbsp vinegar

1 tbsp honey

1 tsp salt


Directions:

  1. If starting with dried beans, soak them in water overnight, drain, then place in a pot of boiling water for 30- 40 minutes until soft. Drain and let cool.

  2. Place the beans in a large bowl, add the rest of the ingredients, stir and enjoy!
