These soft and chewy chocolate chip cookies are the perfect treat to satisfy your sweet tooth! The addition of a touch of cinnamon make them taste like a chocolate chip snickerdoodle cookie. Yum! Best part is, they are gluten-free, grain-free
and refined sugar-free, but you would never know it by the way they taste.
Ingredients:
2 eggs
5 tbsp butter
3 tbsp honey
1 tbsp coconut sugar
2 cups almond flour
3 tbsp coconut flour
1/2 tsp cinnamon
3/4 tsp baking soda
1/4 tsp salt
1/2 cup sugar-free dark chocolate chunks
This amount makes 1 dozen cookies.
Directions:
Preheat oven to 350F° and line a baking tray with parchment paper.
In a small food processor or blender, blend the eggs, butter and honey until it is fully incorporated.
Add the coconut sugar, flours, baking soda, cinnamon and salt. Blend until it forms a smooth batter.
Mix in the chocolate chips by hand.
Scoop a small amount of dough and roll into a ball. Lay it on the tray and press down slightly to flatten.
Bake for 12-14 minutes or until golden brown on top. Enjoy!
