Blueberry Beet Smoothie

Smoothies are the best way to pack in a whole bunch of easily digestible nutrition into a meal. This blueberry beet smoothie is loaded with powerful antioxidants and gut friendly compounds for a healthy microbiome.


Beets are one of my top foods to add into your diet more frequently due to their immense health benefits. Not only are they high in immune-boosting vitamin C, B vitamins, fiber, iron, manganese, copper, magnesium, and potassium but they are also known to lower blood pressure, reduce inflammation, boost stamina, support detoxification, and to ward off cancer.


If you aren’t fond of eating beets plain, add them to a smoothie. Along with some blueberries and apple, you have a tasty antioxidant burst to start your day off right!


Ingredients:

1 banana

2 medium sized cooked beets

1 cup frozen blueberries

1 apple

1 cup of orange juice

1.5 cups of coconut milk

1/2 cup greek yogurt or plain yogurt of choice*

Juice from 1 lime

5 mint leaves


*I use a homemade 24 hour fermented lactose-free yogurt. You can find information about the benefits of homemade yogurt and the recipe here.


Directions:

Blend all ingredients in a high speed blender and enjoy!
