Blinis with Smoked Salmon and Caviar

This crowd-pleasing, bite-sized party appetizer is easy to make and can be prepared in advance. They look beautiful arraigned on a platter and will for sure be a special treat for your next gathering!! 


My New Year’s Day tradition is making blinis with caviar to welcome in the new year.  It took many attempts to find the right combo of ingredients and batter consistency for these gluten and grain-free pancakes, but these savory little pancakes are perfection! 


Ingredients:

2 eggs

1/4 cup almond milk

1 tbsp honey

1/4 tsp vanilla

3/4 cup almond flour

1/8 tsp salt 

2 tbsp coconut oil for the pan


Directions:

  1. Mix all ingredients for batter in a bowl and blend well until a smooth batter forms. 

  2. Heat a pan on medium heat. Melt 1/2 tbsp coconut oil in the pan, swirling it around to ensure the whole pan is coated. 

  3. Pour a spoonful size of the batter into the pan leaving about an inch between pancakes. 

  4. Cook for about 2 minutes on each side or until golden brown.


This amount yields about 25 mini pancakes. 


TOPPINGS! 

There are so many options for toppings: 


-Crème Fresh

-Sour cream

-Greek style plain yogurt

-Whipped goat cheese with honey

-Other dairy free yogurt / sour cream alternative of your choice. 

(I used a homemade 24 hour fermented lactose-free yogurt that was strained to thick consistency)


-Smoked salmon (you could add avocado and dill)

-Caviar 

-Make it sweet and add a sliced strawberry or some jam 

-Crab meat with chives 

-Pesto and prosciutto 


Be creative! The topping options are endless!
