Beet Artichoke Pistachio Salad

For those hot summer months, sometimes a refreshing salad is all you need. The beets and artichokes are both loaded with potassium, iron and magnesium as well as many other vitamins and nutrients and are a great source of fiber. The artichoke hearts ranks among one of the most antioxidant-rich foods. Throw in a sprinkle of heart healthy pistachios and this is a powerhouse salad.



Ingredients for salad:

6 medium beets

6 artichoke hearts

5 oz goat cheese crumbles

Pistachios, roughy crushed

Fresh oregano for garnish


Dressing:

2 tbsp olive oil

1 tbsp honey

2 tsp Sherry vinegar

2 tsp salt

Cracked pepper to taste


Directions:

  1. Assemble the parts of the salad on a plate.

  2. Whisk the ingredients for the dressing in a bowl and pour over salad

  3. Enjoy!
