It’s gazpacho season!! And what I love about gazpacho soup is you can make a delicious meal that doesn’t require any cooking. Just toss all the raw ingredients in a blender and you have a meal made in 90 seconds!
This watermelon gazpacho is a refreshing take on the traditional gazpacho. It blends sweet, juicy watermelon with ripe tomatoes, cucumbers, and bell peppers. It’s sweet and savory, a little spicy, and very refreshing. Just what you need for these hot summer days!
Ingredients:
2 cups of watermelon
8 large tomatoes
1 cup cucumber
1 green bell pepper, de-seeed
2 cloves of garlic
1/2 jalapeño , de-seeded
1 tbsp sherry vinegar
4 tablespoons olive oil
1 tsp salt
Directions:
Put all ingredients in a blender and blend until smooth. Garnish with chopped up tomato, cucumber, jalapeño, feta and basil. Enjoy!
