Peanut Butter Chocolate Cookie Bites




My 13-year-old daughter has really enjoyed baking this past year. It has been wonderful to see her come up with her own creations that truly are delectable and taste like they came from the local bakery. She made these delicious and chewy cookie bites that were the perfect sweet treat after dinner. They did not last long on our counter!! 


With only 7 healthy ingredients, these gluten, grain, and sugar-free treats are good for you, yet taste like a true indulgence! She used a healthier Nutella swap from Artisana, which uses hazelnuts, cacao powder, coconut oil and coconut sugar. You could also just melt dark chocolate.


Ingredients:

2 cups almond flour

1/4 tsp baking soda

1/4 tsp salt

1/4 cup coconut oil, melted

1/3 cup honey or maple syrup

2 tbsp peanut butter

1 tbsp cocoa powder (optional)*


*My daughter divided the dough into 2 bowls. She kept one plain but separately added cocoa powder to the other bowl for some extra chocolate flavor. Add 1 extra tbsp of honey or syrup to the one that has cocoa powder to balance out the sweetness. Both flavors are delicious!! 


Directions:

  1. Preheat the oven to 350F°. Place a silicone mini muffin tray on a baking sheet for easy transfer. In place of silicone, paper muffin liners can be used.

  2. Mix all the ingredients in a large bowl. 

  3. Place a tablespoon-sized scoop of dough in each muffin well. Use your fingers to flatten the dough and make an indent in the middle. 

  4. Bake in the oven for about 12 minutes until golden brown. 

  5. Let cool, then be creative with how to decorate! Try a peanut butter and chocolate swirl, add chunks of peanuts and dark chocolate, or simply drizzle melted chocolate on top.
