Sheet pan dinners are a quick and easy way to get dinner on the table fast with an easy clean up. This flavorful combination of celery root and banana peppers along with the smokiness of a bacon is the perfect match with the roasted chicken.
Celeriac (celery root) is a very versatile and low-carb alternative to potatoes. It is loaded with fiber and important vitamins and minerals such Vit B6, C and K. It is also a great source of antioxidants.
Ingredients:
4 chicken breast (bone-in, skin-on)
4 chicken thighs (bone-in, skin-on)
1 onion, chopped
2 celery root, peeled and chopped
8 banana peppers, de-seeded and chopped
One package of sugar-free bacon, chopped
4 tbsp olive oil
2 tsp salt
Pepper to taste
Directions:
Preheat oven to 425ºF.
Place chopped onion, celery root, banana pepper and bacon on a baking tray. Toss with olive oil, salt and pepper.
Place the chicken in a large bowl and toss with olive oil, salt and pepper.
Place chicken on top of veggies and sprinkle an additional bit of salt to help crisp up the skin.
Roast in oven for 45 minutes until chicken is 165ºF and golden brown on top.
